Applesauce Oatmeal Muffins

These are so tasty.

Finding something to eat on the go can be a chore and a hassle. If you stop at a convenience store, you're at the mercy of what they have on their shelves. If you choose a protein bar, it's a little bit better than if you chose a candy bar. These muffins are moist, yummy, and portable. Since you made them from scratch, you know everything that's in them!

1 cup dry oatmeal
1 cup unsweetened applesauce
1/2 cup milk (you can choose skim, soy, almond, rice, etc)
2 egg whites
2 Tbsp ground flaxseed (easy to grind in a coffee bean grinder)
2 Tbsp and 1 tsp canola oil (I just substitute more applesauce for the canola oil)
1Tbsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp ground nutmeg (I only do a 1/4. Nutmeg is a powerful spice)
3/4 cup whole wheat flour
1/2 cup dried fruit (cranberries, cherries, raisins, blueberries, strawberries...)

Preheat your oven to 375 degrees. Line your muffin tin with liners or use cooking spray.

Combine oatmeal, applesauce, flax, milk, eggs, and oil (if using) in a bowl. Combine the rest of your dry ingredients, including the dried fruit, in another bowl. Poor the wet into the dry and stir it up!

I find a 1/4 cup works well for filling the muffin cups. Bake for 15 to 20 minutes. Cool on wire rack.

These muffins are great to reach for whenever you feel those hunger pangs starting to gnaw at you. They're only 120 calories.
